Spiced Pineapple Pickups

Pineapple bites spiced with cinnamon, cloves, sugar, and vinegar.

30 oz canned pineapple chunks in heavy syrup
3/4 cup vinegar
1 1/4 cups granulated sugar
dash salt
6-8 cloves
1 4-inch cinnamon stick


  1. Drain the syrup from the pineapple into a bowl. To 3/4 cup of the syrup, add vinegar, sugar, salt, cloves, and cinnamon. Heat in a pot for 10 minutes over low heat.
  2. Add pineapple. Bring just to a boil, then remove from heat.
  3. Refrigerate for one to two days.
  4. To serve, drain pineapple. Serve ice cold with toothpicks.
