Zucchini Bread

Zucchini bread flavored with vanilla, cinnamon, and nutmeg.

3 cups flour
1 tsp soda
¾ tsp baking powder
2 eggs
2 cups sugar
2 cups peeled zucchini, grated
2 tsp vanilla
1 tsp salt
3 tsp cinnamon
½ tsp nutmeg


  1. Sift together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  2. In a large bowl, beat together eggs, sugar, zucchini, and vanilla.
  3. Mix the dry ingredients into the large bowl until well blended.
  4. Grease 2 loaf pans and bake at 325 degrees for 1 hour or until toothpick comes out clean.
