Orange Cranberry Bread

A sweet, cake-like bread made with cranberries, chopped nuts, orange zest, and orange juice. This a great bread to make around Christmas.

2 cups flour
1 cup sugar
1 ½ tsp baking powder
½ tsp soda
1 tsp salt
1 egg
1 cup chopped cranberries
½ cup chopped nuts
1 Tbsp grated orange peel
¼ cup butter
¾ cup orange juice


  1. Mix flour, sugar, baking powder, soda and salt. Cut in shortening until mixture resembles coarse corn meal.
  2. Combine juice, egg and orange peel. Pour all at once into dry ingredients. Mix just enough to dampen.
  3. Carefully fold in nuts and cranberries.
  4. Spoon into a greased loaf pan, mounding around edges. Bake at 350 degrees for 1 hour.
