Norwegian Flat Bread

29 Oct

A thin, dry bread made from cornmeal, flour, and butter and cooked on a griddle.

-By Carrie (Strommen) Lennie

2 cups corn meal
2 cups white flour
2 level Tbsp butter

  1. Mix all together and add enough cold water to hold together like a pie crust.
  2. Roll out very thin with grooved rolling pin and bake slowly on ungreased griddle or electric griddle, or in a moderate oven, 325 to 350 degrees.
  3. Watch closely. When it begins to get a light golden color, turn and bake on other side.
  4. Let dry out completely before putting into a container. Keep in a dry place.
