Norwegian Coffee Cakes

Muffin-sized coffee cakes made with currants or raisins, cream, and cardamon.

¼ lb butter
¾ cups sugar
2 large eggs
½ cup cream
½ cup currants or raisins
1 tsp ground cardamon
2 ¼ cups flour
2 tsp baking powder


  1. Cream the butter and sugar together. Add well-beaten eggs. Add the cream currants, cardamon and flour sifted with baking powder.
  2. Grease small muffin tins and fill each cup 2/3 full. Bake at 375 degrees for 20 minutes. Makes 3 dozen cakes.
