Orange-Banana Salad Ring

Ingredients:

2 3-oz pkgs or 1 6-oz pkg Orange gelatin
2 cups boiling water
1 cup sour cream
3/4 cup cold water
1 tsp lemon juice
10 orange sections
5 pecan halves
1/2 cup diced orange sections
1/2 cup diced banana
1/2 cup finely-chopped celery

Directions:

  1. Dissolve gelatin in boiling water. Measure 1 cup and blend in sour cream; chill until slightly thickened.
  2. Add cold water and lemon juice to remaining gelatin; chill until slightly thickened.
  3. Arrange orange sections and pecan halves in mold. Spoon thickened clear gelatin over fruit and nuts in mold.
  4. Fold diced orange, banana, and celery into sour cream mixture. Spoon over clear gelatin. Chill until firm – at least 4 hours. Makes 10 servings.
