Taco Soup

TacoSoupSmallA cheesy taco soup made with ground beef, salsa, onions, sour cream, and Velveeta cheese.

Ingredients:

1 lb ground beef (can substitute turkey)
1 chopped onion
5 3/4 cups chicken broth
26 oz mild or medium salsa
1 pkg Taco seasoning (with the amount of water specified on package)
4 oz Velveeta cheese
1/2 cup sour cream
Carrie (Strommen) Lennie adds 1 15-oz can black beans and 8 oz of frozen corn

Directions:

  1. In a skillet, brown meat with onions; drain fat.
  2. In a large soup kettle, combine meat and onions with chicken broth, salsa, taco seasoning mixed with water, Velveeta cheese, and sour cream.
  3. Cook over medium heat until hot, but make sure not to let it boil.
  4. Serve with tortilla chips, Fritos, rice, or just plain.
