A cheesy taco soup made with ground beef, salsa, onions, sour cream, and Velveeta cheese.

1 lb ground beef (can substitute turkey)
1 chopped onion
5 3/4 cups chicken broth
26 oz mild or medium salsa
1 pkg Taco seasoning (with the amount of water specified on package)
4 oz Velveeta cheese
1/2 cup sour cream
Carrie (Strommen) Lennie adds 1 15-oz can black beans and 8 oz of frozen corn
- In a skillet, brown meat with onions; drain fat.
- In a large soup kettle, combine meat and onions with chicken broth, salsa, taco seasoning mixed with water, Velveeta cheese, and sour cream.
- Cook over medium heat until hot, but make sure not to let it boil.
- Serve with tortilla chips, Fritos, rice, or just plain.
