Julie’s Veggie Soup

This is an excellent soup to eat if you’re trying to watch your weight! Tomatoes, green onions, celery, green beans, carrots and green peppers all cooked in an onion, beef broth and seasoned with curry, parsley, and Worcestershire.

1 – 2 cans of stewed tomatoes
3 – 4 large green onions
1 large can of beef broth (no fat)
1 pkg. Lipton Soup Mix (chicken noodle)
1 bunch of celery
2 cans green beans
2 lbs carrots
2 green peppers
salt, pepper, curry, parsley, and Worcestershire to taste


  1. Cut veggies into small to medium pieces. Cover with water. Boil fast for 10 minutes.
  2. Reduce to a simmer and continue to cook until vegetables are tender.
