Bubble ‘N Squeak

Bubble ‘N Squeak is traditionally made with whatever Thanksgiving leftovers you might have on hand, but this recipe uses specific Thankgiving leftovers. A mixture of leftover Corn Souffle, Pork Sausage Dressing, Red Garlic Mashed Potatoes, and turkey is formed into thick patties, coated in flour, and pan-fried in butter until heated through. The patties are then served with reheated Turkey Gravy drizzled over the top.

Ingredients:

2 cups Corn Soufflé, cold
2 cups Pork Sausage Dressing, cold
2 cups Red Garlic Mashed Potatoes, cold
2 cups leftover, cold turkey, broken up into bits
2 cups leftover Turkey Gravy, reheated
Flour for dredging
Butter for frying (or Wesson vegetable oil)

Directions:

  1. Mix Corn Soufflé, Pork Sausage Dressing, Red Garlic Mashed Potatoes, and turkey in a large bowl until well blended.
  2. Form into thick hamburger-sized patties. Cover all sides of each patty with flour.
  3. Heat butter or oil in frying pan over medium-high heat. Cook patties on each side for about 5 minutes or until browned and hot. (Either do in batches or use multiple frying pans.)
  4. Serve two per person topped with turkey gravy. This is best right after Thanksgiving because it will use up the leftovers. Traditionally you can mix whatever leftovers together that you want, but I’ve found these ingredients to be a good combination.
