Broccoli Rice Casserole

BroccoliRiceCasserole Broccoli, rice, onion, and celery are baked in a creamy, mushroom sauce with Velveeta cheese sauce poured all over the top.

1 small onion, chopped
½ cup celery, chopped
1 10-oz pkg frozen broccoli, thawed and chopped
1 Tbsp butter
3 cups cooked rice
8-oz Velveeta Cheese Sauce
1 10.75-oz can condensed cream of mushroom soup
1 5-oz can evaporated milk


  1. In a large skillet over medium heat, sauté onion, celery and broccoli in butter for 3-5 minutes. Stir in cheese, soup and milk until smooth.
  2. Place rice in a greased 8-inch square baking dish. Pour cheese mixture over; do not stir.
  3. Bake uncovered at 325 degrees for 25-30 minutes or until hot and bubbly.
