This meatloaf is anything but dry! The ground chuck is mixed with onions, mushrooms, green pepper, eggs, and breadcrumbs, and is topped with strips of bacon. The recipe makes a lot of meatloaf so you can have cold meatloaf sandwiches for leftovers with mayo and onions.

4-5 lbs ground chuck (80% lean)
1 large onion, finely chopped
1 can mushrooms (finely chopped) and juice
½ green pepper chopped fine
2-3 eggs
2 cups breadcrumbs
warm water
salt and pepper
3 strips of bacon


  1. Mix together meat, onion, mushrooms, green pepper, salt, pepper and garlic.
  2. Push a hole into center of mixture. Crack eggs into hole. Scramble eggs with fork. Mix into meat.
  3. Mix enough warm water into breadcrumbs to make them wet and not pasty. Mix into meat.
  4. Shape meat into loaf. Place in 9X13 inch pan. Lay 3 strips of bacon on top. Bake at 325 degrees for 2 ½ hours. Let stand 20 minutes before cutting loaf.
