This breakfast casserole is made with hashbrowns, eggs, green onions, mushrooms, bacon and cheddar cheese.

6 large eggs
½ cup milk
3 cups hash browns, thawed
1/3 cup green onions, sliced
1 can sliced mushrooms
½ tsp salt
½ tsp garlic powder
1 ½ cup shredded cheddar cheese
4 slices bacon, cooked and crumbled
- Heat oven to 350 degrees. Beat together eggs and milk in a medium bowl; stir in hash browns, green onions, mushrooms, half the bacon, 1 cup cheese, garlic and salt.
- Pour into a greased 9-inch pie plate or quiche dish. Bake for 25-30 minutes or until center is set.
- Sprinkle remaining bacon and ½ cup of cheese over top of pie. Continue baking 3 to 4 minutes or until cheese is melted.
