Norwegian Ham Meatloaf

Ham and pork mixed up with tomato soup, baked in a tangy, brown-sugar sauce with sliced onions on top. This dish is served with a home-made mustard sauce for dipping or to be used as a glaze.

1 lb ground ham
2 lbs ground pork
1 egg, beaten
1 cup bread crumbs
½ cup milk
3 Tbsp tomato soup
1 cup brown sugar
¼ cup water
¼ cup vinegar

½ cup tomato soup
½ cup prepared salad mustard
½ cup vinegar
½ cup sugar
3 beaten egg yolks


  1. Combine ham, pork, egg, bread crumbs, soup, paprika and salt. Mix well and form in loaf. Put onion slices on top.
  2. Bring brown sugar, water and ¼ cup vinegar to a boil and pour over top. Bake at 325 degrees for 2 hours.
  3. For mustard sauce: Mix tomato soup, prepared salad mustard, ½ cup vinegar, ½ cup sugar and 3 beaten egg yolks. Cook over low heat, stirring constantly. This can be used as the glaze for ham loaf or for dipping.
