Porcupine Meatballs

No, they aren’t made from porcupines! This meatball is mixed with beef, white rice, and onions, and served with a brown gravy poured over the top. Buttered noodles go well with this meal.

2 lbs ground chuck
1 cup cooked rice
seasoned salt and pepper to taste
2 eggs
½ cup onion chopped fine


  1. Mix together all ingredients.
  2. Shape into 3-inch balls.
  3. Bake at 350 for 1 hour.
