Chicken breasts topped with a mayo, Parmesan, garlic, bread-crumb mixture, and baked to a golden brown.
-By John Strommen
1/2 cup Real Mayo
1/3 cup fresh grated parmesan cheese
1/2 teaspoon garlic powder
4 boneless, skinless chicken breast halves
1/2 cup Italian seasoned bread crumbs (crushed croutons work best)
- Combine mayonnaise, cheese and garlic powder and mix it all up at the same time.
- Mix in the breadcrumbs last and make sure they get soggy but not all mushed up. It’s important that the breadcrumbs aren’t too small. I actually used croutons and crushed them.
- Spread chicken with mayo mixture.
- Plop the chicken on baking sheet, bake at 425° 15 to 20 minutes. It’s done when the breadcrumbs start turning brown.
