Parmesan Chicken

ChickenParmesan Chicken breasts topped with a mayo, Parmesan, garlic, bread-crumb mixture, and baked to a golden brown.

-By John Strommen

1/2 cup Real Mayo
1/3 cup fresh grated parmesan cheese
1/2 teaspoon garlic powder
4 boneless, skinless chicken breast halves
1/2 cup Italian seasoned bread crumbs (crushed croutons work best)

  1. Combine mayonnaise, cheese and garlic powder and mix it all up at the same time.
  2. Mix in the breadcrumbs last and make sure they get soggy but not all mushed up. It’s important that the breadcrumbs aren’t too small. I actually used croutons and crushed them.
  3. Spread chicken with mayo mixture.
  4. Plop the chicken on baking sheet, bake at 425° 15 to 20 minutes. It’s done when the breadcrumbs start turning brown.

Mmm, I haven’t had that in a while! I’ll have to make it soon.
