Onion and Egg Bake

A baked casserole of onions sauteed in a tarragon butter sauce, layered with hard-boiled eggs, and covered with a thick layer Parmesan cheese.

Ingredients:

2 large Spanish onions
¼ cup butter
1 can cream of mushroom soup
½ cup milk
1 tsp salt
¼ – ½ tsp tarragon
¼ tsp pepper
8 hard boiled eggs, sliced
14 cups Parmesan cheese

Directions:

  1. Thin slice onions. Melt butter, add onions, sauté until tender.
  2. Stir in sour, milk, salt, tarragon and pepper.
  3. Cover the bottom of a 2-quart casserole with a thin layer of onion mixture. Add a layer of egg slices. Keep layering ending with onion mixture.
  4. Sprinkle with cheese. Bake in 350 degrees for 30 minutes.
