1 ½ lbs chuck of beef
6 medium potatoes
2 Tbsp butter
1 tsp salt
½ tsp pepper
2 large onions, sliced
1 ½ cup hot water
¼ cup heavy beer

  1. Cut meat into ½” thick slices and pound slightly. Cut potatoes in 1-inch thick slices. Heat butter, sauté onion and brown meat on all sides. Place in layers into a roasting pan with other ingredients except for the water and beer.
  2. Pour water into frying pan. Stir and pour liquid into roasting pan. Add beer.
  3. Cover and bake at 375 degrees for 1 hour until meat is tender. Sprinkle with chopped parsley (this adds flavor).
