Smoked Sausage Beet Casserole

Sliced beets covered in a sweet orange-apple sauce, baked with smoked sausage and cheddar cheese.

½ cup orange juice
2 tsp corn starch
½ cup apple sauce
1 Tbsp honey
dash nutmeg
dash salt
1 16-oz jar beets, sliced and drained
½ lb smoked sausage cut into 1-inch pieces
½ cup shredded cheddar cheese


  1. Stir orange juice into corn starch and cook over medium heat until slightly thickened. Stir in applesauce, honey and seasonings.
  2. Turn beets into 1 quart casserole. Pour sauce over beets. Lay sausage slices over the top and cover with cheese.
  3. Cover the casserole dish and bake in the oven at 350 degrees for 35 to 40 minutes.
