Sliced beets covered in a sweet orange-apple sauce, baked with smoked sausage and cheddar cheese.

½ cup orange juice
2 tsp corn starch
½ cup apple sauce
1 Tbsp honey
1 16-oz jar beets, sliced and drained
½ lb smoked sausage cut into 1-inch pieces
½ cup shredded cheddar cheese
- Stir orange juice into corn starch and cook over medium heat until slightly thickened. Stir in applesauce, honey and seasonings.
- Turn beets into 1 quart casserole. Pour sauce over beets. Lay sausage slices over the top and cover with cheese.
- Cover the casserole dish and bake in the oven at 350 degrees for 35 to 40 minutes.
