Pork loin spiraled with a baked apple-raisin stuffing.

-By Carrie (Strommen) Lennie

Baked Apple Raisin Stuffing
1 Foot-Long Pork Loin
1 Tbsp Dried Rosemary, crushed
1 Tbsp Sage (powder)
½ Tbsp Garlic Powder
Pepper to taste

  1. Cut the pork loin length-wise so that it will unroll into a ¾-inch thick rectangle.
  2. Season the top of the meat with rosemary, sage, garlic, and pepper. Flip the meat over so the seasonings are on the bottom.
  3. Spread the stuffing evenly over the top of the meat. Roll the meat back up as tightly as you can to prevent the meat from drying out while cooking. Use string or meat pins to hold the roll together.
  4. Bake at 350 degrees for 1 ½ hours or until meat thermometer reads 165 degrees.
