Asparagus with Orange Sauce

AsparagusWithOrangeSauce Asparagus served in an orange-yogurt sauce.

Ingredients:

2 lbs fresh asparagus, trimmed
¼ cup plain yogurt
2 Tbsp mayo
2 Tbsp orange juice
1 tsp grated orange peel
dash cayenne pepper
orange slices and additional orange peel

Directions:

  1. Place asparagus and a small amount of water in a skillet; bring to a boil. Cook for 6-8 minutes or until crisp-tender.
  2. Meanwhile, combine the yogurt, mayo, orange juice, peel and cayenne.
  3. Drain asparagus; top with orange sauce.
  4. Garnish with orange slices and peel if desired.
