Fresh asparagus roasted in olive oil and seasoned with garlic.

1 bunch of asparagus
salt and pepper to taste
- Preheat the oven to 400 degrees.
- Cut off the woody stem ends of the asparagus. Use a paring knife to neaten the ends. If the stalks are vey large and tough, peel off the outer layer.
- Place the asparagus on a nonstick baking pan. Add the olive oil, garlic powder and salt and pepper to taste and toss the asparagus to coat well. I probably use about the same amount of garlic powder as I do salt.
- Place them in the preheated oven and roast them for about 20 minutes, or until they are nicely colored and cooked through. Remove the asparagus from the oven and serve them either warm or at room temperature.
