Pan-Fried Tomato Slices

NoFoodImage Tomato slices pan-fried in butter with parsley.

3 Tbsp butter
3 large tomatoes, cored and sliced 1/2 in thick
salt and pepper to taste
1/3 cup chopped parsley


  1. In a large skillet, melt 1 1/2 Tbsp butter over medium heat. Add half of the tomato slices. Cook 1 minute; turn and cook 1-2 minutes until just soft. Remove from pan.
  2. Melt remaining butter and and add remaining tomatoes tomatoes. Sprinkle tomatoes in skillet with salt and pepper and half of parsley. Top with first batch of tomatoes.
  3. Add remaining seasoning. Cover and cook 1 minute longer until hot and bubbly.
