Tomato slices pan-fried in butter with parsley.

3 Tbsp butter
3 large tomatoes, cored and sliced 1/2 in thick
salt and pepper to taste
1/3 cup chopped parsley
- In a large skillet, melt 1 1/2 Tbsp butter over medium heat. Add half of the tomato slices. Cook 1 minute; turn and cook 1-2 minutes until just soft. Remove from pan.
- Melt remaining butter and and add remaining tomatoes tomatoes. Sprinkle tomatoes in skillet with salt and pepper and half of parsley. Top with first batch of tomatoes.
- Add remaining seasoning. Cover and cook 1 minute longer until hot and bubbly.
