Roasted Colored Peppers and Zucchini

Yellow, orange, and red peppers with zucchini, roasted in garlic and olive oil.

1 red pepper, sliced
1 orange pepper, sliced
1 yellow pepper, sliced
1 9-inch zucchini, sliced
¼ tsp garlic powder
3 Tbsp extra virgin olive oil
salt and pepper to taste


  1. Preheat oven to 375 degrees.
  2. Combine all vegetables in a large bowl. Add olive oil and toss to coat peppers. Sprinkle garlic powder, salt and pepper and toss again.
  3. Pour vegetable mixture into a glass baking dish and bake for 25 minutes or until zucchini turns yellow and vegetables soften to desired tenderness.
