Red Cabbage

Robert Salzer’s red cabbage recipe, which contains apples and onion to make a sweet and tangy flavor.

1 head red cabbage
1 ½ cups sugar
1 cup vinegar
1 medium onion
2 apples
1 ½ Tbsp oil


  1. Peel onion and dice with cored, unpeeled apples. Cook in oil until tender.
  2. Soak shredded cabbage in cold water. Drain cabbage, dump in kettle with oil, onion and apple. Add a cup of water, let cook on med heat until the whole mess boils down a little. Stir occasionally.
  3. Add sugar and vinegar, cook on low heat about 2 hours until you can’t stand the tantalizing smell and the whole mess is mushy.
