An old-fashioned tomato butter that is served cold with grilled or fried fish.

8 Tbsp unsalted butter
2 Tbsp tomato paste
½ tsp salt
¼ tsp sugar
- Cream butter with an electric mixer at medium speed.
- When light and fluffy, beat in the tomato paste, salt and sugar.
- Transfer to a serving bowl and chill until ready to serve.
- Serve cold with hot grilled or fried fish. Yields ½ cup.
