Norwegian Tomato Butter

An old-fashioned tomato butter that is served cold with grilled or fried fish.

Ingredients:

8 Tbsp unsalted butter
2 Tbsp tomato paste
½ tsp salt
¼ tsp sugar

Directions:

  1. Cream butter with an electric mixer at medium speed.
  2. When light and fluffy, beat in the tomato paste, salt and sugar.
  3. Transfer to a serving bowl and chill until ready to serve.
  4. Serve cold with hot grilled or fried fish. Yields ½ cup.
