Norwegian Hartshorns

These are traditional Hartshorns that are flavored with lemon and cardamon and deep fried.

½ cup butter
4 eggs
1 cup sugar
½ lemon rind, grated
½ tsp ground cardamon
2 tsp baking soda
4 ½ cups flour


  1. Melt the butter and allow to cool.
  2. Beat the eggs and sugar together. Add the butter, lemon rind, cardamon, baking soda and flour. Mix them well and set them in the refrigerator to chill overnight.
  3. Roll small lumps of dough into strips 6-inches long and as thick as your little finger. Form each strip into a ring.
  4. Cook them in deep fat until they are golden brown. Drain on paper towels and store them in a sealed tin. Makes 36 Hartshorns.
