These are traditional Hartshorns that are flavored with lemon and cardamon and deep fried.

½ cup butter
1 cup sugar
½ lemon rind, grated
½ tsp ground cardamon
2 tsp baking soda
4 ½ cups flour
- Melt the butter and allow to cool.
- Beat the eggs and sugar together. Add the butter, lemon rind, cardamon, baking soda and flour. Mix them well and set them in the refrigerator to chill overnight.
- Roll small lumps of dough into strips 6-inches long and as thick as your little finger. Form each strip into a ring.
- Cook them in deep fat until they are golden brown. Drain on paper towels and store them in a sealed tin. Makes 36 Hartshorns.
