Ginger-spiced apples pan-fried with slivered almonds.
-By Carrie (Strommen) Lennie
¼ cup sugar
¼ tsp powdered ginger
¼ cup slivered almonds
5 Tbsp butter
4 apples, cored and sliced in ¼” thick rings
- Mix sugar and ginger. Sauté almonds in 1 tablespoon of the butter until toasted; stir in half the sugar-ginger mixture; set aside and keep warm.
- In a large frying pan with cover, melt remaining butter. Add apple slices and sprinkle with remaining sugar-ginger mixture. Cover pan and cook apples over medium heat until almost tender, about 10 minutes. With spatula, carefully turn apples and cook on other side until tender.
- Arrange about 4 apple rings in a row, overlapping, on each of 4 warm dessert plates. Sprinkle almonds in a line down center of apple rings. Spoon any remaining pan juices over apples. Makes 4 servings.
