Lemon dessert bars topped with powdered sugar. These will melt in your mouth!

1 cup room temperature salted butter
½ cup powdered sugar
2 cups flour
½ tsp salt
6 Tbsp flour
2 cups sugar
juice of 2 lemons (Mom used Real Lemon brand juice)
powdered sugar for top
- Mix first 4 ingredients.* Press into a 9X13 glass pan. Bake at 350 degrees for 20 minutes or until golden brown.
- Combine eggs, sugar, lemon juice and flour. Beat thoroughly. Spread over warm pastry. Bake at 350 degrees for 25 minutes. Cool. Sprinkle powdered sugar over warm pastry.
*Note from Mom: Cut butter in with pastry blender or use 2 knives until butter is pea-sized. If over processed the crust will be tough. The trick is to get the pieces of butter coated with the flour as you are cutting it in. Don’t let the butter clump up. This also goes for pie crusts. Also, do not soften butter in microwave. This changes the composition of the butter and it will not be a tender crust.
