Raisin Rice Pudding

Eva Strommen’s homemade rice pudding that has a custard-like consistency and is made with raisins, cinnamon, and nutmeg.

½ cup rice
4 cups evaporated milk
3 Tbsp butter
½ tsp salt
½ cup sugar
3 eggs, beaten
2 tsp vanilla
1 cup raisins


  1. Cook rice according to package.
  2. Add remaining ingredients, mix well. Pour into buttered casserole. Set in hot water. Sprinkle with cinnamon and nutmeg.
  3. Bake in oven at 350 degrees for 1 to 1 ½ hours.
